Wine Store Review (from the bottle): "Some say "Cab is King" in Paso Robles. We honor this heritage with a wine that lives up to this lineage. We blend this Cabernet Sauvignon to create a concentrated wine with aromas of currant, blackberry, and hints of caramel, finishing with plum and cherry lingering on the palate."

Wine Folly: The Wine Folly text labels the dominant flavors in Cabernet Sauvignon as black cherry, black currant, red bell pepper, baking spices, and cedar. It is considered a fuller-bodied red, and can contain different flavors based on the region in which they were grown and harvested in. The grape is a natural cross between Cabernet Franc and Sauvignon Blanc, and is the most widely planted grape in the world (136-137). *I use the Kindle version of this text.

My Review: This wine smelled absolutely delicious on the nose, with vibrant berry and sweet vanilla notes exploding out of the glass. There is a lot of tannic complexity in this wine, producing a pretty sour initial taste. However, even through this prevalent tartness, there are deep blackberry and cherry flavors that emerge. There is a subtle sweetness to it, which I described more as a vanilla taste, however the label says it is caramel. I enjoyed this robust red wine.

Our Yosemite Road Vineyards Pinot Grigio is light-bodied and possesses a rich aroma. Notes of zesty lemon married with hints of pear to create a crisp, flavorful finish." 

Wine Folly: The dominant flavors within a Pinot Grigio are lemon, yellow apple, melon, nectarine, and peach. They tend to be lighter in body, but fuller in acidity. This wine is also more widely known as Pinot Gris. They originate from France and Italy. The fruity and dry style of this wine is primarily made in the USA, Australia, and other warmer climate regions. (pg. 62-64)

My Review: For such an inexpensive wine, I thought it was really delicious! I got really intense apple and lemon scents on the nose right away, as well as an almost salty smell. The saltiness also came through when tasting it, as well as apple, lemon, peach, and an earthy undertone. The flavor is not super robust, but really crisp and refreshing. Not too much tannic composition in it, but definitely some acidic flavors. I will definitely be trying this wine again.

Tasting - Kirkland Asolo Prosecco

Wine Store: "Having only 11% ABV and being “extra dry” according to the back label, this wine is light, fruity, and with just a hint of sweetness. “Extra dry” sparking wines actually have a greater amount of residual sugar than “brut” wines, so if you’re looking for the driest possible Champagne, Cava, or Prosecco, reach for “brut” instead of “extra dry,” That being said, the additional sweetness in this Prosecco is very slight, and completely undetectable in a mimosa." Wine Folly: The dominant flavors within a Prosecco wine include green apple, honeydew melon, pear, honeysuckle, and cream. This varient originates in Northern Italy, primarily in Veneto, Italy. There are three quality levels of prosecco, which are prosecco, Prosecco Superiore, and Conegliano. It tends to pair best with cured meats or fruit-driven appetizers. (51-53).

My Review: This wine surprised me! I wasn't expecting to enjoy a sparkling wine as much as I did with this one. On the nose, this wine smelled very citrusy, mainly of lemons and limes. There was also a strong green apple candy scent to it. The green apple definitely carried into the taste as well, where it was accompanied by light acidity and wonderful bubbles. I would say it had a light-body to it with nothing too sour or tannic in there, so I enjoyed it a lot!

 Wine and Cheese Pairing

Pairing Notes:

Sauvignon Blanc: On it's own, this wine is very citric and earthy to the nose. The aroma most closely reminded me of grass clippings and lime. It has a sweetness to it, but mainly has flavors of high acidity and citric lime and lemon. 

Paired with the sharp white cheddar, it definitely cut out some of the sharpness of the cheese and created a smoother, less acidic taste of the wine. I noticed it also leveled out some of the citrus taste, which seemed to be the main flavor when tried on it's own.

With the smoked gouda, I feel like the smoky flavor of the cheese became much more emphasized when paired with this wine. The citrus once again calmed down a bit and created a much smoother and sweeter taste of the wine. I liked this combination a lot, because both the flavors of the cheese and the flavors of the wine melded together to create an entirely new flavor profile.

The swiss cheese was probably the worst combination with this wine. The tartness of the swiss only magnified the tart citric flavors of the wine, making an extra sour taste. I feel like the cheese eliminated all of the other complexities within the wine, such as the earthly, minerally flavors, and only highlighted the tartness.


Rose: The Rose on its own has a sour scent to it, with hints of jammy berries. The taste is pretty robust, but not too overpowering due to the hints of berry sweetness to it. The aftertaste seemed pretty earthy, lingering almost a metallic taste to it. I'm not sure if that is a good taste to be picking up on, but regardless, I enjoyed this wine a lot on it's own.

Sharp white cheddar: With the cheddar cheese, the sourness of the wine seemed to be cut down a lot, and a much more sweet flavor became prevalent. I personally liked the sharp acidity of the wine on it's own, so this pairing was not my favorite.

Smoked gouda: This combination was pretty bitter. The smokiness of the gouda seemed to get lost when paired with this wine, and I was left with a pretty tart, almost tannic like taste in my mouth-- which is quite a difference from the tastes I got from the wine on it's own.

Swiss: The swiss paired with the rose really changed the smoothness of the wine. I feel like the wine became much less acidic and tangy and leaned towards a smooth creamy profile.


Moscato: On the nose, this wine is extremely fruity and floral. The scent reminded me of smelling an apple juice that had a hint of blueberries in. The taste was super jammy, with heavy tastes of apple and pear. There was little to no acidity on the palette, and certainly no tannic components. 

Sharp white cheddar: The sharp, tart flavor of this cheese simply did not compliment the sweet flavors of this wine. If this wine had some acidity to it, then maybe the tastes would have melded better together. The wine almost felt like it was trying to compete with the strong flavors of the cheese, but failed to do so. The cheese was too overwhelming for the sweetness of the moscato.

Smoked gouda: The smoky flavor of this cheese was totally not the correct flavor to be paired with this sweet dessert wine. The smokiness melded into a pretty awful taste when met with the apple and pear flavors of the moscato.

Swiss: This cheese pairing was the closest one to being somewhat good. The sweet flavors of the wine still had trouble meshing with the sharp qualities of the cheese, but this was the mellowest cheese of them all, so it wasn't too harsh. My main conclusion with this wine is that it probably is not meant to be paired with cheese, but rather some fruit or a dessert.

Wine Folly: The dominant flavors usually found within Chardonnays include yellow apple, starfruit, pineapple, butter, and chalk. For French Chardonnays, they tend to have a more prominent flavor of quince and starfruit, while other regions have other dominant profiles. Chardonnay is the world's most planted white grape, making it a hugely popular wine in both old world and new world wines. (70-73)

My Review: I really liked this wine! This was my first experience with a Chardonnay, and it didn't disappoint. The main thing I noticed was the citrus notes being super strong, accompanied with a pretty strong acidity. However, it was still a smooth and appealing wine. On the nose, It definitely smells strongly of apples and pears. Super yummy.

My Review: This was probably one of the first red wines I have truly enjoyed and wanted to share with others. It isn't an overwhelmingly tannic wine, so it was more palatable for me. It has some really warm sweetness to it which I mainly view as a vanilla flavor, but also super bold berry tastes that hit me right away. There is definitely acidity to this wine, but nothing so strong that I felt the need to pair it with a food to calm it down. This is a really smooth and somewhat bold red wine that I think is great for an introduction into the world of reds. I would totally re-buy this!
